If you have two Mustangs in your hand and play both of them. Would you then be viewed at +2 by all others?

It is never possible to have more than one card with same name in front of the same player. You cannot play the second Mustang until the first goes away somehow (typically Cat Balou).

What if you have one down and one in your hand and your about to shoot El Gringo. Can you replace the first Mustang with the one in your hand to help prevent El Gringo from possibly taking it from you?

No. You can do something like that just with Weapons.
