knife says that you need a distance of one. what if you have a gun out? does that give you the distance of the gun? what about panic or any other +1 cards?

no, only with apaloosa and silver you can shoot to longer distance

A weapon modifies the distance of the Cards that use the symbol with the Hat inside a foresight.
Otherwise, the distance is given by the physical (seats) distance plus the changes due to the following cards

Wrong. Guns naturally allow you to shoot at longer distances.

As Feri_01 said, either throw at distance 1 or get an appaloosa/silver and you can throw further away.
